Armando Hernández – Colombia 

Don Armando has been involved in coffee his whole life. As a child, he helped picking at his parents’ farm. At the age of 15, he was responsible for his first coffee lot. Now he owns the farm and manage with the help of his wife and son.

Fully ripe cherries in a purple grape color were picked for this lot and left to 15 hours of cherry fermentation. The cherries were then depulped without water and only the best beans were selected. Next, coffee beans were left in the fermentation tank for 22 hours without water. Finally, the beans were washed twice and were sundried for 10 days.
